Sun-dried Tomato Pesto

Sun-dried Tomato Pesto 
Serves 4
Ingredients
200 gr Sun-dried tomatoes from jar
2 cloves of garlic
60 gr pine nuts or walnuts
30 gr fresh basil leaves
4 tablespoons of grated Pecorino Romano or Parmesan cheese
150 ml of oil from the jar of sun-dried tomatoes or similar amount of extra virgin olive oil
Salt and pepper
 
Method 
1. Add all ingredients to a food processor
2. Blitz until a consistency to your liking is achieved. Some will prefer a chunky sauce, others a smoother consistency.
3. Check for seasoning.
4. Serve with pasta or as a great tomato relish on your burger. Mix with vinegar and oil for a salad dressing, or add to any other recipe that calls for a tomato sauce.
