Cheesy broccoli pasta bake
Serves 4
Ingredients
300g short pasta
300g broccoli, cut into florets
25g butter
25g plain flour
300ml milk, warmed
1 tbsp wholegrain or dijon mustard
Grated nutmeg
150g Parmesan, grated
Salt and pepper

Method
1. Cook the pasta, adding broccoli for the final 4-5 mins and cooking until tender. Drain well.
2. Heat the butter in a saucepan until it melts.
3. Stir in the flour, taking care not to burn the mixture.
4. Add the warmed milk to the flour-butter mix in batches, taking care to achieve a creamy consistency before adding each batch.
5. Once the mixture begins to bubble, stir in the mustard, nutmeg and half the cheese.
6. Season.
7. Stir the pasta and broccoli into the sauce.
8. Pour pasta, broccoli and sauce into ovenproof dish.
9. Sprinkle remaining cheese on top and place under preheated grill for 3-4 mins until golden and bubbling.
