Greek pork burgers

Ingredients

500g minced pork
Pinch of chili flakes
50g breadcrumbs
50g grated kefalotyri or halloumi
Two tablespoons chopped parsley
One garlic clove, crushed
Salt and pepper
Olive oil 


Method

1. Place breadcrumbs in mixing bowl and moisten with two tablespoons of cold water.
2. Add mince, cheese, parsley, garlic, chili flakes.
3. Season with salt and pepper and mix.
4. Chill mixture in fridge.
5. Shape into four burgers.
6. Heat two tablespoons of olive oil in pan and fry burgers on each side until cooked through. Alternatively, cook on barbecue, under the grill or in griddle pan.
7. Serve in pitta bread, with tzatziki sauce, sliced red onion, tomatoes and rocket leaves.
