Greek fava (yellow split pea puree
Serves 4
Ingredients
250gr dried yellow split peas
1 shallot or red onion, halved
2 cloves of garlic, peeled
2 bay leaves
5  sprigs of fresh thyme
200ml extra virgin olive oil 
juice of one lemon
salt and pepper
chopped parsley
 
Method
1. In a saucepan, combine the rinsed dried peas, shallot/red onion, garlic cloves, bay leaves and thyme.
2. Cover with cold water and bring to to the boil.
3. Once boiling, skim the scum, then turn heat down. Simmer for 45 mins or until peas are cooked.
4. Once peas are cooked, remove shallot/onion, bay leaves and thyme sticks.
5. Add the peas and garlic to a food processor.
6. While processing, add salt and pepper to taste and olive oil and fresh lemon juice until you get the desired pureed consistency. Add small amount of reserved water from saucepan if mixture is still too thick.
7. Transfer pureed split peas to a platter. Dress with more olive oil, slices of red onion, capers, chopped parsley, paprika, etc.
8. Serve as a dip or as an accompaniment to any roast dinner.
