Baked feta, leek and courgette pasta
Ingredients

200gr slab of feta cheese
1 courgette
2 leeks
4 cloves garlic in skin
1 red onion, sliced
Olive oil
salt and pepper
pinch of chili flakes
300gr short pasta

Method
1. Preheat oven to gas mark 6.
2. Slice leeks sliced lengthways and chop.
3. Dice courgette and slice onion.
4. Add vegetables to baking tray.
5. Place slab of feta on top.
6. Drizzle vegetables and feta with olive oil.
7. On top, sprinkle chili flakes and salt and pepper.
8. Bake in oven for 30-35 minutes.
9. Squeeze out cooked garlic from skins, mince and mix with vegetables and broken up feta.
10. Add cooked pasta to baking dish and mix well.
11. Top with herb of choice, rocket or spinach.
12. Serve.
