Falafel burgers
Makes four burgersIngredients
1 small red onion, roughly chopped
3 garlic cloves, roughly chopped
1 large handful of parsley
1 small handful of fresh dill, or 1-2 tsps dried dill
1 tsp ground cumin
1 tsp ground coriander
½-1 tsp chilli powder or paprika, smoked or hot
200g dried chickpeas, soaked overnight in cold water (or 400gr tin of cooked chickpeas)
2½ tbsp gram or plain flour
2 tsp baking powder

1. Put the onion, garlic, herbs and spices in a food processor and blitz until coarsely chopped.

1. Put the onion, garlic, herbs and spices in a food processor and blitz until coarsely chopped.
2. Drain the chickpeas, rinse, then roughly dry them in a tea towel, add to the processor with three-quarters of a teaspoon of salt, and blitz until everything is finely chopped.
3. Transfer to a bowl and stir in the flour and baking powder. Add more flour if the mixture does not hold together well.

4. Place in the fridge for at least an hour to chill.

6. Shape the falafel mix into patties.
7. When the oil is hot, fry the patties for two to three minutes on each side, until dark golden and crisp.
8. Transfer to a plate lined with kitchen paper.
