Vegetarian Tavas
Ingredients
2-3 courgettes
1 carrot
2 red or white onions
3-4 garlic cloves
2 potatoes

1 aubergine
1 red bell pepper
Bay leaves

Salt and pepper
4-6 fresh tomatoes, 200gr cherry tomatoes or 400gr tinned tomatoes
Olive oil

Method
1. Wash and cut potatoes, courgettes and carrot.
2. Wash and dice the aubergine.
3. Slice the red pepper, onions and garlic.
4. Place all the veggies into an oven-proof dish.
5. Add tomatoes and bay leaves.
6. Season well with salt and pepper.
7. Drizzle with olive oil.
8. Bake in a moderate oven for one hour or until veggies are tender.
