Ingredients
1 kg leg of lamb
8 large potatoes
2 large tomatoes, each cut in quarters
2 tablespoons dried oregano
1/3 glass olive oil
2 large onions sliced
3 bay leaves
3 cloves of garlic sliced
3 sprigs of rosemary
2 cloves
1 teaspoon salt
10 peppercorns crushed
1 glass dry white wine
Extra salt, pepper and oregano for seasoning.
Method
1. Add 4 Tablespoons olive oil to large roasting tin.
2. Add dried oregano, peppercorns, garlic, cloves, bay leafs, rosemary/thyme leaves, salt. Mix.
3. Add pieces of meat, mix.
4. Add potatoes, mix.
5. Place tomatoes and slice onions on top.
6. Sprinkle lemon juice and white wine over meat, potatoes, etc.
7. Add salt, pepper and oregano to taste.
8. Cover tightly with greaseproof paper/foil. Double layer. Properly sealed.
9. Place in preheated oven gas mark 4 for at least three hours.
