Rice omelette
Serves 2-3
Ingredients
5 eggs
3 large, firm tomatoes
Six tablespoons boiled, salted rice
Butter or olive oil
Salt and pepper
Breadcrumbs
Plain flour
Sugar
Method
1. Peel and thickly slice the tomatoes and sprinkle them with salt and pepper and sugar.
2. Mix enough breadcrumbs with flour to make a coating for the tomatoes.
3. Dip each slice of tomato into breadcrumb mix and fry in hot butter or olive oil. Put aside and keep hot.
4. Beat the eggs, add salt and pepper, then the rice.
5. Spread egg mixture in frying pan and cook slowly until eggs are set.
6. When it is ready, put the omelette in a dish and garnish with fried tomatoes.
