Greek rice pudding (Rizogalo)



Greek rice pudding (Rizogalo)
Serves 4
Ingredients
1.1 litres of milk
170gr sugar
170gr rice
Ground cinnamon to taste
Lemon zest
Two teaspoons of cornflour, mixed with water to paste.

Method
1. Cook the rice with sugar and lemon zest, stirring frequently until rice is very soft.
2. Add sugar and cornflour paste and continue to cook until mixture is creamy.
3. Cool, place in serving dishes, sprinkle with cinnamon.
4. Place in fridge and serve when cold.
