Potato omelette

Serves 2

Ingredients
3 medium potatoes
4 eggs
Handful of grated cheese or chunks of fet
3 tablespoons grated onion
Butter or olive oil
Salt and pepper

Method
1. Wash and peel the potatoes and cut into thin strips.
2. Put the butter (or oil) into frying pan and fry onions till browned.
3. Fry the potatoes.
4. Beat the eggs, add the cheese and salt and pepper.
5. Pour mixture into frying pan over the potatoes and onions.
6. Cook over medium heat until eggs have set.
