Perfect Tzatziki

Ingredients
Half a cucumber finely chopped
1 clove of garlic
1 tablespoon red wine vinegar
salt
1 tablespoon extra virgin olive oil
1 tablespoon finely chopped dill
250gr Greek yogurt

Method
1. Peel, deseed and finely chop cucumber. Sprinkle with a pinch of salt and place in colander for 10 minutes. Squeeze out excess liquid.
2. Using salt, crush garlic to a paste.
3. Add yogurt. Mix.
4. Add all other ingredients. Mix.
5. Refrigerate for at least an hour before serving.
