Tahini Sauce



Tahini Sauce

Ingredients
crushed sesame seed paste
2-4 cloves of garlic
juice of 1-2 lemons
salt
extra virgin olive oil
1/4 cup of water
parsley, chopped
2 tablespoons Greek yogurt (optional)

Method
1. Crush garlic to a paste with a pinch of salt
2. Add 5-6 tablespoons tahini paste. Mix using a wooden spoon.
3. Add lemon juice. Mix.
4. If using, stir in yogurt.
5. Gradually add water and mix until sauce loosens.
6. Stir for 5-10 minutes. Keep tasting for salt and lemon.
7. When you have a smooth paste, the saue is done.
8. Pour 1 tablespoon of extra virgin olive oil and 1 tablespoon of chopped parsley on top of sauce. Refrigerate until ready to serve.
