Gordon Ramsay’s Marinated Mushrooms

Serves 4 as an antipasti dish

Ingredients
300g White or Brown Button Mushrooms, cleaned
Olive Oil
1-2 Tablespoons White Wine Vinegar
2 Shallots, thinly sliced
3 stalks of Tarragon (leaves only)
Salt & Pepper to taste

Method
Heat an empty pan on medium heat.
When the pan is hot, add the tbsp of Olive Oil to coat the pan.
Just before the Olive Oil smokes, add the mushrooms.
Sauté the mushrooms to get rid of the water completely.
Add  salt and pepper, then chopped  shallots until mushrooms browned.
Add the white wine vinegar and reduce the vinegar by half. Add vinegar to outside of pan, not on top of mushrooms.
Add the remaining Olive Oil and simmer for about 2-3 minutes.
Transfer everything to a bowl.
Add the Tarragon leaves to the warm Olive Oil and stir to mix thoroughly.
Leave to cool and transfer to a fridge to marinate for at least 24hrs.
Serve cold on crusty bread, salt & pepper to taste.
