Cashew Cream

Makes 1 pint

Ingredients
2 cups raw cashews
3-4 cups filtered water, plus more for soaking
2-3 Tablespoons extra virgin olive oil
1/2 a lemon, juice only
2 tsp sea salt
1 tsp fresh thyme leaves

Method
1. Soak cashews overnight
2. Drain, rinse cashews
3. Place in blender
3. Add salt, thyme, oil, lemon.
4. Cover with water
5. Blend
