Grilled Courgette Tzatziki

Ingredients
2 courgettes
3 tbsp extra virgin olive oil
2 tbsp lemon juice
small handful chopped fresh mint leaves
1 garlic clove, crushed
250g Greek yogurt
small handful chopped fresh dill
Method
1. Heat a griddle pan. Halve the courgettes lengthways, brush with 1-2 tbsp oil
and season. Place flesh down on the griddle for a few minutes until grill lines appear. Turn over and cook for 2-3 minutes to
soften skin side.
2. Transfer the courgettes to a chopping board and cut into thin slices widthways. If you have a mandoline slicer, use third setting to achieve best slice. Place courgettes in a bowl and mix with the lemon juice and the mint; season. After a few minutes, add the garlic, yogurt, dill and 1 tbsp oil; mix well and serve.
