Spinach with lemon juice

Spinach with lemon juice

Serves 4, as a side dish for a roast dinner or a vegetarian meal.

Ingredients
1kg fresh spinach
1 large onion, sliced
25gr butter or 3 tablespoons olive oil
Juice of half a lemon
Salt and black pepper

Method
1. Wash, strain and shred spinach
2. Sauté the onion in butter/olive oil until transluscent
3. Add the spinach, salt and pepper and stir until spinach is coated in the oil and the leaves are shining
4. Cover and cook gently for 6-7 minutes
5. Add lemon juice and serve
