Spinach with Rice (Spanakorizo)
Ingredients
900gr spinach
Two leeks
Two medium onions
112gr rice
Half a cup of olive oil
Salt and pepper
600ml water
Method
1. Thoroughly wash the spinach and break it into small pieces.
2. Clean and chop the remaining vegetables.
3. Heat the olive oil, the spinach and chopped vegetables and cook until brown.
4. Add salt and pepper and continue cooking until the mixture has softened.
5. Add 600ml of water, bring to the boil.
6. Add the rice and cook until rice is tender, from 15 to 20 minutes.
