Cypriot potato salad

Ingredients

750gr salad potatoes, i.e. baby or new potatoes

Four spring onions or half a red onion.

Either fresh coriander or parsley or dried mint

Two garlic cloves (optional)

Olive oil

Juice of one lemon

Salt and pepper

Method

1. Peel, wash and boil potatoes until soft. Drain.

2. Crush the garlic. 

3. Finely chop the onion(s) and the fresh herbs.

4. Add these ingredients to the potatoes.

5. If using dried mint, add it to the potatoes with the salt and pepper.

6. Add plentiful amount of olive oil – to your taste – and lemon juice. 

7. Mix well. Taste for seasoning.
