Serves 4
Ingredients
1 apple – such as Braeburn or Cox's, core removed, cut into wedges
1 leek or red onion
150gr cherry tomatoes on the vine
1tsp fennel seeds
6 sprigs fresh thyme
pinched crushed chilli flakes
8 pork sausages
250ml white wine
1 tbsp olive oil
mashed potato, to serve
Method
1. Heat the oven to 200 degree C/180 degree C fan/Gas Mark 6
Place the apples, leeks (onion) and cherry tomatoes in a roasting dish then scatter over fennel seeds, thyme and crushed chillies and season. Place sausages on top, then pour over wine and drizzle over olive oil.
2. Roast for 40 minutes until sausages are golden brown, cooked through and no pink meat remains. Serve with mashed potato.
