Courgette pesto for pasta
Serves 4
Ingredients
400g pasta
2 small courgettes
40g almonds or any nut you prefer
1 garlic clove
Salt
Handful of basil leaves
100ml olive oil
50g parmesan, or any tangy cheese you like, grated
Method
1. Grate courgettes into a tea towel and squeeze out the excess water.
2. In a blender, blitz the nuts, garlic and a pinch of salt. Add the courgette, basil and oil, and blitz again. Scrape into a large bowl, stir in the cheese and taste for salt.
3. Drain the pasta and combine with the pesto. Serve immediately.
