Spinach and basil pesto
Ingredients
1 bunch of basil, leaves only
2 cups baby spinach
2 garlic cloves
50 gr toasted pine nuts
50 gr grated parmesan cheese or a cheese of your choice
3/4 cup virgin olive oil
salt and pepper to taste
Method
In a food processor, add basil leaves, spinach, garlic cloves, toasted pine nuts, cheese. Add salt and pepper to taste. Pulse to combine. With the machine running, add olive oil in a slow stream.
